Domaine Camille & Laurent Schaller, located in Préhy (Chablis), produces wines of Chardonnay, Aligoté and Pinot Noir. Father and son Schaller manage vineyards in Chablis and surrounding villages, with appellations including Petit Chablis, Chablis and Chablis Premier Cru.

History

Domaine Camille & Laurent Schaller is a family wine estate in Préhy, in the heart of Chablis. It was founded in 1955 by Laurent's parents, who originally came from Alsace and Belgium and focused on grain farming. In the late 1970s, they decided to switch to winemaking.

Today, Laurent and his son Camille farm vineyards in Préhy, Courgis, Chablis, Poilly-sur-Serein, Chichée (Premier Cru Vaucoupin) and Beine (Premier Cru Vau de Vey), where they grow Chardonnay, Aligoté and Pinot Noir.

After years of supplying grapes to the La Chablisienne cooperative, they began bottling their own wines in 2014.

Vinificatie

The 25 hectares of vineyards, located on Chablis' distinctive clay and limestone soils, are sustainably managed and certified to HVE-3 (Haute Valeur Environnementale) standards. The grapes for the Premier Crus are harvested by hand, while the rest of the vineyards are harvested by machine to ensure efficiency and freshness.


After harvest, the grapes are loaded via gravity into a pneumatic press, where they are gently pressed to minimize oxidation. After a 12- to 24-hour settling period, alcoholic and malolactic fermentation takes place in stainless steel tanks. The wines are aged sur lies (on the yeast residue), mostly in stainless steel, although the Chablis Vieilles Vignes undergoes a brief aging in neutral French oak. This gives the wine finesse, purity and a distinct minerality, with classic Chablis aromas, refined and elegant. 
 
Expect notes of citrus and ripe green fruit, perfectly balanced with lively acidity and full, ripe flavors.

The Premier Cru wines show extra depth, with rich aromas of white fruit coming from decades-old vines.

AOC Chablis

The AOC Chablis is a prestigious wine appellation in Burgundy, known for its fresh, mineral-driven white wines made from 100% Chardonnay grapes. The vineyards are planted on limestone-rich clay soils, known as Kimmeridgian, which give the wines their characteristic saline and chalky profile.

Chablis has four quality levels:

  • Petit Chablis: fresh and light, sourced from higher-altitude plots.

  • Chablis: classic and mineral-driven, well-balanced with fruity notes.

  • Chablis Premier Cru: more complex, with aging potential, sourced from selected hills in the region.

  • Chablis Grand Cru: the finest wines, powerful and refined, originating from seven specific vineyards
