This Chablis Vieille Vignes has a seductive mineral profile that makes it a perfect match for fine dishes. Unlike a classic Chablis, which is usually aged entirely on stainless steel, this wine has spent 30% of its aging in oak barrels. This provides a fuller structure and subtle wood notes, while retaining Chablis' signature minerality. The result is a harmonious balance of freshness, wood influence and fruit expression.
Body: medium

The Domain
Domaine Camille & Laurent Schaller is a family business based in Préhy, in the heart of the Chablis region. Laurent and his son Camille cultivate 25 acres of vineyards and, as a small winemaker, focus on quality over quantity.
They grow three grape varieties: Chardonnay, Aligoté and Pinot Noir. Their vineyards are located in the villages of Préhy, Courgis, Chablis, Poilly-sur-Serein, Chichée (Premier Cru Vaucoupin) and Beine (Premier Cru Vau de Vey).
The vineyards lie on Chablis' typical Kimmeridgien soil, a geological terroir consisting of a mixture of clay and limestone, rich in fossil shells. This unique soil type was formed during the Jurassic era, about 150 to 155 million years ago. This chalky soil contributes to the wines' distinct minerality and freshness, a characteristic appreciated in Chablis wines worldwide.
The Schaller family applies sustainable winemaking practices and tills the soil to avoid the use of herbicides. Since 2020, the estate has been certified with Haute Valeur Environnementale level 3 (HVE 3), underscoring their commitment to environmentally friendly practices.
Known for their freshness, finesse and pronounced minerality, Domaine Schaller's wines perfectly reflect the unique terroir of the Chablis region.
Chablis Vieilles Vignes white 2023 | Domaine Schaller
This cuvée undergoes 10-month maturation, with 30% of the wine resting in oak barrels and 70% in stainless steel tanks.
This approach differs from the classic Chablis style, which usually matures entirely on steel. The partial wood aging gives the wine a fuller structure and subtle wood notes, without losing the lively freshness and minerality so typical of Chablis' terroir. The result is an elegant and gourmet wine, in which minerality, fruit expression and gentle wood influence are nicely balanced.
