Tressallier is a rare, historic white grape from the Saint-Pourçain region in Auvergne, where it has been cultivated since the Middle Ages. Wines from this grape once graced the tables of the French royal court. What makes Tressallier unique is its fresh character, lively acidity, and refined floral aromas. It is often blended with Chardonnay but also shines on its own in light and elegant wines. Although it fell into relative obscurity for many years, Tressallier has experienced a modest revival in recent decades as a symbol of regional wine heritage and biodiversity.

The estate
Domaine des Bérioles is a family estate focused on organic and biodynamic wine production. Located in the Saint-Pourçain region, it produces wines from the unique Tressallier grape, alongside Chardonnay for white wines and Gamay and Pinot Noir for red wines.
The vineyards are carefully cultivated with a strong respect for nature and the environment, and the grapes are harvested at the optimal moment to preserve their quality. The wines are produced with great attention and respect for the terroir, and the estate follows a lunar calendar for both vineyard and cellar work. The domaine offers a diverse range of wines, including white, red, rosé, and sparkling wines.
Tressallier Brut Nature 2022 - Domaine des Bérioles
This sparkling wine is produced using the traditional method (a second fermentation in the bottle, as in champagne), without any dosage added (zéro dosage, meaning no sugar is added after fermentation), resulting in a pure and crisp finish.
After the second fermentation, the wine is aged for 12 months sur latte (horizontally on racks to encourage contact with the yeast cells), which contributes to the complexity and refinement of the mousse.
