This cuvée, made from our estate's signature grape variety, Tressallier, exudes seductiveness, elegance and refinement. Thanks to the manual harvest, this attractive wine delivers big, well-balanced aromas, with a hint of citrus and a beautiful, long finish.

The domain
The Domaine des Bérioles is a family-owned winery focused on organic and biodynamic wine production. Located in the Saint-Pourçain region, it produces wines from the unique Tressallier grape, as well as Chardonnay for white wines and Gamay and Pinot Noir for red wines.
The vineyards are cultivated with care, with nature and the environment at the heart of the vines, and the harvest is picked at the right time to preserve the best of the grapes. The wines are produced with great attention and respect for the terroir, and the estate follows a lunar calendar for both vineyard and cellar work. The estate offers a varied range of wines, including white, red, rosé and sparkling wines.
Trésaille 2023 - Domaine des Bérioles
The pressing takes place at low pressure with a pneumatic press, which ensures a gentle extraction of the must. The wine is then clarified at a temperature of 9°C.
Vinification and fermentation start at a low temperature of 13°C, then slowly increase the temperature to 17°C to completely convert the sugar into alcohol. This process contributes to a perfect balance of aromas of the grape variety.
After fermentation, the wine is racked and aged in stainless steel tanks on fine lees (5 to 8 months), which further refines the wine and increases its complexity.
