A great white Saint-Joseph, signed by Domaine Vallet, in which the dominant Roussanne brings richness and creaminess, perfectly balanced by a beautiful granite freshness.
A blend of Roussanne (80%) and Marsanne (20%), harvested by hand, this Saint-Joseph “Méribets” has a yellow color with light reflections. The nose reveals aromas of stone fruit, dominated by peach and apricot, complemented by delicate notes from the ageing process. On the palate, the wine is fresh and full-bodied, with a supple and slightly creamy texture thanks to bâtonnage and partial ageing in barrels. The power is medium to fairly high, with a rich wine that offers good volume on the palate while maintaining a nice balance.
Body: powerful
Sweetness: dry

The grapes are pressed immediately as whole bunches to preserve their aromatic finesse.
Half of the vinification takes place in stainless steel tanks and half in 228-liter barriques, with fermentation at low temperature followed by complete malolactic fermentation.
Aging on fine lees with bâtonnage for 9 months adds complexity, roundness, and volume, while preserving the wine's natural freshness.
