The natural balance between the lively and bright Clairette and the full-bodied and soft Grenache blanc, organically grown, for a refined, elegant and refreshing wine.

This cuvée illustrates the harmonious combination of organically grown Clairette and Grenache blanc. It has a straw-coloured robe with green reflections and opens with a subtle nose of white fruits such as pear and peach, enriched with floral notes of lime and acacia, accentuated by fine spicy and brioche-like notes. The palate is both fresh and elegant, revealing a delicate mineral structure, soft and full-bodied, ending in a lingering finish with hints of ripe fruit.

Body: medium

Sweetness: dry

Acidity: medium acidity

Food pairing: Ideal with seafood, fish soup or eel, but also goes well with veal ragout, fried chanterelles or a simple omelette with porcini mushrooms.

The estate

The Simian estate, located in Piolenc in the southern Rhône Valley, has been a family business for five generations. The estate covers 25 hectares of vineyards, spread across several appellations: AOC Châteauneuf du Pape, AOC Massif d'Uchaux and AOC Côte du Rhône, as well as a few hectares of local wine. Since 2011, the Serguier family has been operating the vineyard according to the principles of organic and biodynamic agriculture, certified by Ecocert and Demeter respectively. This sustainable approach emphasises harmony between the vineyards and nature, which contributes to the quality and character of their wines.

  • The grapes are harvested when perfectly ripe and then gently pressed to preserve their aromatic purity.

A yeast strain is added for fermentation with indigenous yeasts at 16/18 °C for 10 to 12 days.

Maturation on lees in stainless steel tanks and a few barrels. This maturation allows the wine to retain its freshness and natural liveliness, while developing a soft and balanced texture. This minimalist approach emphasises the authenticity of the grape variety and the precision of its expression.
