The domain
Domaine du Chardonnay is a winery located in the heart of Chablis, France, founded in 1987 by three winemakers: Étienne Boileau, William Nahan and Christian Simon. They joined forces and expertise to create an estate dedicated to producing high-quality Chablis wines.
The estate covers about 34.5 hectares and produces wines under the appellations Petit Chablis, Chablis and several Chablis Premier Cru, including Vaillons, Montmains, Vosgros and Mont de Milieu.
The estate is certified with the highest environmental certification HVE level 3 and the EVE VEGAN label, underscoring their commitment to sustainable and vegan wine production.
Located on the banks of the Serein River, near the Grand Cru hills, Domaine du Chardonnay continues to combine tradition and innovation to produce authentic Chablis wines that reflect the region's unique terroir.
Domaine du Chardonnay has received recognition for its quality wines. For example, their Chablis 2021 and Chablis Paradis 2020 received a silver medal with a score of 90/100 at the Decanter 2023 competition. In addition, the 2020 Chablis Premier Cru Montmains earned a silver medal with 91/100, and the 2020 Chablis Premier Cru Vaugiraut received an outstanding score of 92/100.

The wine undergoes careful and controlled alcoholic fermentation, with the process closely monitored to best preserve the aromatic expression of the grapes. After fermentation, the wine matures on lees in a combination of temperature-controlled tanks and oak barrels for 15 to 18 months. This ageing adds depth, complexity and a subtle wood touch, while retaining the characteristic minerality of Chablis.
After ageing, the wine is filtered to ensure purity and clarity. The result is a refined, well-balanced Chablis with elegant structure and a perfectly integrated wood influence, reflecting the region's terroir beautifully.
