This Chablis Premier Cru presents a pale golden color with brilliant reflections. On the nose, the wine offers a subtle combination of fruity and mineral notes, including hints of white fruits, almond, and a touch of honey. On the palate, the wine reveals a round and full opening, followed by lively acidity that provides freshness and beautiful balance.

The estate
Domaine du Chardonnay is a winery located in the heart of Chablis, founded in 1987 by three winemakers: Étienne Boileau, William Nahan, and Christian Simon. They combined their expertise to create an estate focused on producing high-quality Chablis wines.
The estate covers around 34.5 hectares and produces wines under the appellations Petit Chablis, Chablis, and several Chablis Premier Cru vineyards including Vaillons, Montmains, Vosgros, and Mont de Milieu.
The estate holds the highest environmental certification Haute Valeur Environnementale Level 3 as well as the EVE VEGAN label, highlighting its commitment to sustainable and vegan wine production.
Located along the banks of the Serein, near the Chablis Grand Cru hills, Domaine du Chardonnay continues to combine tradition and innovation to produce authentic Chablis wines that reflect the unique terroir of the region.
The estate has received recognition for the quality of its wines. For example, their Chablis 2021 and Chablis Paradis 2020 received silver medals with a score of 90/100 at the Decanter World Wine Awards 2023 competition. In addition, the Chablis Premier Cru Montmains 2020 received a silver medal with 91/100, and the Chablis Premier Cru Vaugiraut 2020 achieved an excellent score of 92/100.

The wine undergoes a careful and controlled alcoholic fermentation, with the process closely monitored to preserve the aromatic expression of the grapes. After fermentation, the wine ages on the lees in a combination of temperature-controlled tanks and oak barrels for 15 to 18 months. This aging adds depth, complexity, and a subtle touch of oak while maintaining the characteristic minerality of Chablis.
The wine is produced entirely vegan, meaning that no animal products are used during fining or filtration. After aging, the wine is carefully filtered to ensure purity and clarity.
The result is a refined and well-balanced Chablis with an elegant structure and perfectly integrated oak influence, beautifully reflecting the terroir of the region.
