This vieille vignes red wine (80% Carignan and 20% Syrah), made from old vines from 1952, will delight you with its aromas of red and black fruits (blackberry, blueberry) with an elegant peppery touch.
Scents of garrigue complete the deep, complex nose. The long finish is supported by a very discreet tannic structure with a fine texture.

The Domaine
Domaine de Gazel is a family estate in Laure-Minervois, located in the Minervois wine region. The estate covers 15 hectares, 10 of which are planted with old vines between 25 and 70 years old (vieilles vignes). They cultivate Syrah, Grenache, Carignan, Cinsault, Cot and Macabeu, among others, with a focus on environmentally friendly and organic viticulture.
All grapes are harvested by hand, and vinification and bottling are done on the estate itself. Production is small-scale, which makes for authentic and characterful wines.

Manual harvesting, followed by destemming, as the winemaker does not want a “vegetal” (green) wine.
Fermentation takes place in stainless steel tanks at a temperature of around 26 degrees. The temperature is kept stable in the traditional way, namely by means of water from the well that is pumped through the double wall of the tanks. Malolactic fermentation also takes place, converting the harsh malic acids into softer lactic acids.
Maturation takes place in stainless steel tanks, lasts approximately 6 months, and occurs on the fine lees. A small amount of sulphites is added (just enough, approximately 10 g, and relatively late, namely in November).
