A high-altitude, organic, biodynamic red wine with no added sulphites, embodying spontaneity and the freshness of a gust of wind on the slate hills of the Haut-Languedoc.


À la Venvole is a free-flowing, lively wine deeply rooted in its terroir: a characterful red wine that is refreshing, structured and delicately wild, to be enjoyed without premeditation, like a moment stolen from the wind. À la Venvole is an old expression that means unexpected, without premeditation, like a fresh gust of wind on the hills of the Haut-Languedoc. Ideally, allow the wine to breathe for a while before serving, so that all the aromas can be released.


Body: medium

Sweetness: dry

Tannins: moderately tannic

Food pairing: serve chilled at around 14°C for casual, even improvised combinations: lamb kebabs, marinated peppers, veal with morels, vegetable gratin, fresh pasta...


The estate

Domaine de Cébène was founded by Brigitte Chevalier, a former wine merchant from Bordeaux, and was born out of her desire to create authentic wines from a strong terroir. After leaving Bordeaux for the Languedoc, she chose the schist-covered heights of Faugères, convinced of the unique potential of these soils. At an altitude of 300 metres, facing the Tramontane wind, she cultivates her vines organically and biodynamically, using a natural, artisanal approach that reflects her demanding standards, her intuition and her quest for purity.

  • The grapes are harvested by hand and immediately transported to the winery by gravity in the heart of the vineyard.


    Fermentation begins with a natural yeast made from the estate's own grapes a few days before harvest (homemade pied de cuve). The wine is vinified without the addition of sulphites, partly in whole bunches, with careful temperature control and gentle extraction during macerations lasting around three weeks.


    Aging for 8 to 10 months in stainless steel vats preserves the brightness of the fruit and the purity of the terroir. Blending takes place shortly before bottling. The entire process respects the principles of biodynamic and natural winemaking.
