The pouilly-fuissé (not to be confused with the pouilly-fumé) is a "grand vin de Bourgogne", also called the king of the Mâconnais. It is made exclusively from the chardonnay grape, has a very rich taste and yet a mineral aftertaste. The soil is limestone/claystone which gives the wine its subtle taste.

The colour varies from light gold to deep gold with green reflections. The nose is fine and complex, with mineral notes of flint and white fruits. These are complemented by scents reminiscent of honey and buttery brioche. The attack in the mouth is structured and well balanced, with a toasted nuance. Finesse and elegance characterise this wine.

Dishes : This wine goes perfectly with vegetarian dishes, pastas and with drinks platters, where the flavours complement each other nicely.

The domain:

Alain Normand, originally from Nièvre, settled in the Mâconnais in 1993 on 13 hectares of vineyard. In 2010, the estate expanded with the arrival of Sylvaine and a few hectares of her family, bringing the total area to 35 hectares in Solutré, Chaintré, Prissé, Igé and La Roche Vineuse. Together, they aim to further develop the estate through their combined expertise and experience. Their vision is to conquer new markets, with respect for the environment and the terroir. The aim is not to control nature, but to guide it so that it can contribute optimally to wine production.

Sylvaine and Alain are dedicated to producing the best white and red wines of the Mâconnais, including Pouilly-Fuissé, Mâcon La Roche Vineuse and Bourgogne, from their modern cellar, inspired by the five iconic rocks of the region. They strive to treat the vines with respect, resulting in rich and greedy juices. In addition, they are committed to environmentally friendly practices, using natural raw materials and promoting biodiversity to support a sustainable ecosystem.

  •  The grapes are harvested manually and then pressed with a pneumatic press, using the whole grape bunches for a gentler extraction of the must. This ensures that the delicate aromas and flavours are preserved.

    After pressing, the long fermentation starts at low temperatures with indigenous yeasts, ensuring an authentic and complex development of the wine.

    The wine then matures on the fine lees, adding an extra dimension of complexity and a refined texture, as well as contributing to the richness and balance of flavour. The result is a wine that perfectly expresses the finesse and character of the Pouilly-Fuissé appellation.
